They are indeed color coded to damage types.
Done to an NPC:
Fire = Orange
Cold = Light Blue
Electricity = Yellow
Nature = Dark Green
Spirit = Purple
Physical = White
"Resist" and "Immune" type messages will be shown in the color matching the damage type.
Done to a party member:
Damage = Red
Healing = Green

It encompasses poison damage, amongst other things, yes. |

You can disable the damage number "floaties," yes.
